Christmas time!
I’m really looking forward to Christmas. Only a few more days to go. We’ve got the big tree all decorated, I got my shiny dress ready (to wear at the Sports Awards Gala). The past year went by so fast…even I could not keep up with time 😉 It seems like only yesterday since we all came back from Rio. After a few weeks off I went back tot he track and started my training again. 2017 is only a few weeks away…
Like a lot of birds, I too will be flying towards the south in January. South Africa will be my destination for a couple of weeks. So this means quality family time during the holiday season. At our home we will all be together on the 2nd day of Christmas for lots of food and playing games. We’ve already tried a few small dishes in the past few weeks, the following recipes will definitly be on our menu!
A nice drink to start with: warm punch. We tried this recipe during Sinterklaas and it was a huge success! Easy decision to put it on the Christmas menu.
Warm Christmas punch
Ingredients (3 liters)
– 2 liters apple cider
– 1 liter cranberry juice
– 1 cinnamon stick
– 1 teaspoon of cloves
– 1 apple
– 1 pomegranate
– 2 oranges
Take a pan, heat the apple cider and cranberry juice together with the cinnamon stick and cloves. Make sure it doesn’t boil and leave it on fora bout 30 minutes. Cut the apple in small parts, remove the seeds from the pomegranate en cut the oranges in slices. Divide the fruit over the glasses and pour the punch over it.
Sweet potato plate cake
This easy cake is perfect as a tasty Christmas side dish. And besides, the star-shaped sweet potato gives it a very stylish look.
Ingredients
– 1 sweet potatoe
– 250 gr sprouts
– handful of bacon strips
– 1 egg
– 2 tablespoons olive oil
– 1 small sack grated cheese
Preheat the oven on 200 degrees celcius. Spread the puff paste over the baking tray (don’t forget the baking paper). Cover the pastry with some egg yoke. Cut the sweet potatoe into thin slices (1/2 centimeter). Mix it with the olive oil and use a baking shape to press out the stars. Cut the sprouts in half and spread them over the plate cake. Then, scatter the bacon strips on the cake and equally divide the star-shaped potato slices. Finish with sprinkling some grated cheese on top and put it in the middle of the oven for 20 minutes.
Exotic fruitbowl
Lucky us: we received a big box of exotic fruits the other day! Rambutans, pitahaya, passion fruits and mangistans. Honestly, I never heard of half of these type of fruits before haha. But even so: they taste delicious and look very festive on the dinner table!
Ingredients
– 1 pitahaya
– 1 passion fruit
– 6 rambutans
– handful of pomegranate seeds
Cut the pitahaya in half. Scrape out one of the halves. Fill it with the rambutans, bits of pitahaya, pomegranate seeds and finally some tablespoons of passion fruit. Are you curious about the best way to cut these fruit types? You can get the answer here.
