Speed pizza

Hi everyone! Since I decided not do do any indoor races this season, my life consists of training, training, and some more training. It comes as no surprise that I come home at the end of a day, feeling really hungry. I prefer eating a warm dish, but only if it’s prepared really quick. Lately, this speed pizza has become a real favorite! Of course you can prepare the cauliflower crust yourself, but mine kept falling apart. (I will have to try to get better at this real soon) Luckily for me, you can find fresh ones in the local supermarket. Add some home mad pesto and some good burrata cheese. Check the recipe!

(High) speed pizza

Ingredients (1 person)

  • 1 cauliflower pizza crust
  • 1/2 ball of burrata
  • 1/2 courgette
  • handful of pomegranate seeds
  • 1 teaspoon oregano
  • olive oil

Spinach pesto

  • 100 gr spinach
  • 50 gr pine nuts
  • 50 gr parmesan cheese
  • 3 tablespoons olive oil
  • 1 clove of garlic

Preheat the oven (200 degrees Celsius) Cut the courgette into slices with a cheese slicer. Spread the oregano onto the crust. Cover it with the burrata and the sliced courgette. Sprinkle some olive oil on top of stall and add some salt and pepper if you like. Put the pizza in the oven (follow its instructions concerning time, usually about 8-10 minutes). In the meanwhile prepare the pesto: Bake the pine nuts for just a minute or so. Mix the spinach, baked nuts, parmesan, olive oil and garlic in a blender til its a smooth substance.

Time for the pizza to come out of the oven! Spread the pizza with the pomegranate seeds, pesto and (if you like) some more bits of the burrata. Enjoy!

ps: I absolutely love pomegranate seeds, but getting them out can be a real challenge. I find this way to be the easiest.
